Brewing beer is an art that allows for endless experimentation and creativity. This week, we are excited to delve into the realm of Belgian yeast and the intriguing world of sour beer. Our main goal is to achieve a slightly sour taste while showcasing the unique characteristics of the yeast.

When it comes to brewing sour beer, the choice of yeast plays a crucial role. Belgian yeast, known for its distinct flavors and aromas, is an excellent choice for this style. It adds complexity and depth to the beer, creating a truly memorable experience for the palate.

In order to highlight the yeast's characteristics, we opted for very neutral German Hersbrucker hops. These hops have a mild aroma and bitterness, allowing the yeast to take center stage. By keeping the hop profile subtle, we can fully appreciate the flavors and aromas contributed by the yeast.

As for the malt selection, we chose to use a single pilsner malt. Pilsner malt provides a clean and crisp base for the beer, allowing the yeast flavors to shine through. Its light color and subtle sweetness complement the sourness, resulting in a well-balanced brew.

Now, let's talk about the target ABV (Alcohol By Volume) for our sour beer. We are aiming for a robust 8% ABV. This higher alcohol content adds body and complexity to the beer, enhancing the overall flavor profile. It also provides a pleasant warmth, making it a perfect choice for those looking for a more substantial brew.

When brewing with Belgian yeast, it's important to pay attention to fermentation temperatures. Belgian yeast thrives in slightly higher temperatures compared to other yeast strains. This allows it to produce the desired esters and phenols that contribute to the unique flavors and aromas. However, it's crucial to maintain control and avoid excessive heat, as it can lead to off-flavors and unwanted characteristics.

As we embark on this sour beer brewing journey, we anticipate a delightful outcome. The combination of Belgian yeast, neutral German Hersbrucker hops, and a single pilsner malt will create a beer that is both intriguing and satisfying. The slight sourness and prominent yeast flavors will undoubtedly make this brew a standout in our collection.

So, join us as we explore the captivating world of Belgian yeast and sour beer brewing. Cheers to experimentation and the endless possibilities it brings!
